It seems like that the professor was a bit unreasonable in his grading, so not sure that he should have been fired, but reviewed whether the grading and the expectations are in-line with NYU's curriculum

If the standards of his tests and grading are sensible and have not changed from pre-covid times, then the fault lies with the students that were not prepared enough (due to covid or otherwise).
